Bell Peppers

Select the heavier peppers because they will contain thicker walls, making for a juicy delight. Ensure that your selection is without sunken in areas, and check to see that the stem is green and strong. You want your peppers to be glossy and unwrinkled, which also adds to a gorgeous presentation when cooking stuffed bell peppers.

If you check the bottom of the peppers for only three bumps that means it will have fewer seeds. Why?!? The Female Bell Peppers are more round and have 4 bumps on the bottom. They have more seeds on the inside and when eaten raw the female bell peppers are sweeter than the male bell peppers.  So these are better for salads, veggie trays and sandwiches. The Male Bell Peppers are taller and thin, they only have 3 bumps. They are not as sweet but hold up better in heat and are better for cooking. These are perfect for stews, dips, and cooking.

 

Jalapenos

Wanting to know the heat ranking of a jalapeno without ever having to take a bite? Simply check to see if there are any white striations gathering on one or both ends of the pepper. The more striations that you notice, the hotter the pepper. Wa-lah!
